Rocky Road Pot Brownies

You know we had to give you a pot brownie recipe! Brownies are an absolute staple in any baker’s recipe repertoire, and cannachefs are no different. 

But we couldn’t just give you any old pot brownie recipe. This exclusive NYMK’s recipe is made with melted chocolate for decadent texture and is covered with an ooey-gooey rocky road topping that will leave you begging for more. 

Choose Your Adventure. 

Like most recipes on NYMK, this recipe is adaptable to your taste and tolerance. 

Feel free to change up the topping to whatever ratio sounds tastiest to you. You love a crunchy nut surprise? Add more nuts to the topping (or mixed into the batter). I use cashews for my Rocky Road Pot Brownies, but walnuts, pecans, or even peanuts would taste great! You’re a big fluffy marshmallow lover? Add a handful more to the topping. The world is your oyster, my friend. 

The same goes for dosage. The amount of cannabutter you use depends entirely on your desired potency and the strength of your infusion. For example, if you have ½ cup of cannabutter that has roughly 300mg of THC and you decide to make 16 small brownies, you only need to use ¼ cup of your cannabutter and ¼ cup unsalted butter. And if you feel like making extra strong brownies, throw all of that shit in. No judgment here!

For the Brownies: (Makes 16 small brownies or 8 regular ones)

  • ½ cup (4 oz) unsalted butter/cannabutter**

  • 3 ounces unsweetened chocolate chopped (about ½ cup)

  • ¾ cup all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ½ cup sugar

  • ½ cup brown sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ½ cup semisweet chocolate chips

For the Rocky Road Topping: 

  • 1 cup marshmallows

  • 1 cup semisweet chocolate chips

  • ½ - 1 cup nuts

**Notes: Again, the ratio of unsalted butter to cannabutter is entirely up to you and your desired dosage but be sure to use ½ cup of butter total. 


Instructions:

  1. Preheat the oven to 350℉. Lightly grease an 8-inch square baking pan and then line with parchment paper, leaving plenty of overhang. This allows the brownies to easily slip out of the pan. If you don’t mind eating your brownies straight from the pan, feel free to skip the parchment.

  2. Melt the chopped chocolate and butter in a heatproof glass bowl over a pot of boiling water, until the chocolate and butter are smooth. You can also do this step in 30-second increments in the microwave but be careful not to burn the chocolate! Set aside and allow the mixture to cool slightly.

  3. In a separate bowl, mix together the flour, salt, and baking powder to prevent clumping. 

  4. Whisk the sugar and brown sugar into the slightly cooled melted chocolate mixture. Then add in the eggs and vanilla extract. Next, add in the flour mixture until combined.

  5. Fold in the chocolate chips with a rubber spatula. Mix the batter until all of the ingredients are completely incorporated. 

  6. Pour the finished batter into your prepared pan. Spread the batter as needed until every corner of the pan is evenly covered. 

  7. Place brownies into the oven for 18-22 minutes or until the brownies are about 5 minutes away from being finished. When there are roughly 5 minutes remaining, the topping will be placed on top and then placed back into the oven to finish cooking. The edges of the brownies will look set and the middle will be ever so slightly jiggly. 

  8. While the brownies are in the oven, mix the marshmallows, semisweet chocolate chips, and nuts for your topping. 

  9. Once the brownies look ready, take them out of the oven and evenly spread the topping mix over the top. I use my hands to make sure every bite is a good bite! Put the pan back in the oven and allow to cook until the marshmallows are slightly puffed (not browned) and the chocolate chips look shiny like they’re just beginning to melt. About 5 minutes.

  10. When the topping looks finished, remove the brownies from the oven and let them cool for at least 10 minutes before removing from the pan (I won’t judge you if you say fuck it and just dive headfirst into those chocolatey treats). Slice and enjoy!
