Lemon Space Cake

Perhaps one of the best-known edibles in the world, Space Cakes has risen to legendary stoner status. Whether you’re a beginner in the kitchen or a bona fide professional, this lemon space cake recipe is approachable for all levels—so dive in and get ready for an adventure.

Ingredients:

For the Cake:

  • 1 1/2 cup flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup sugar

  • 1 cup butter/cannabutter (ratio depends on your desired dosage)

  • 1 lemon

  • 1/4 cup plain Greek yogurt (or sour cream)

  • 3 eggs

  • 1 tsp vanilla

For the Glaze:

  • 1 cup powdered sugar

  • 1/2 lemon

  • 1/2 Tbsp milk

Instructions:

  1. Preheat your oven to 350°F and prepare an 8X5 loaf pan with oil or butter.

  2. Mix together your flour, baking powder, and salt. Set aside.

  3. Cream your softened butter with a stand mixer, handheld mixer, or fork until creamy. Add in the sugar and mix until light and fluffy.

  4. Zest and juice your lemon into the sugar and butter mixture, making sure to strain out any seeds. Plop in the Greek yogurt. Mix.

  5. Beat the eggs into the sugar mixture one at a time. Finally, stir the vanilla in.

  6. Scrape down the sides of the bowl and add in the flour mixture until fully combined and smooth. A few lumps are perfectly normal.

  7. Pour batter into prepared pan and bake for 45-60 minutes. You will know it’s ready when you stick in a toothpick or butter knife and it comes out clean.

  8. While your cake is cooking make the glaze. Simply mix together powdered sugar, the juice of 1/2 a lemon, and 1/2 a tablespoon of milk. If the frosting is too thick, add a little more lemon juice or milk.

  9. Remove the cake from the oven when it’s good and ready. Let cool for an hour in the pan before removing it to a cooling rack. Smoke a joint as you wait for your cake to cool.

  10. Once the cake is cool, frost and enjoy.
