Cannabis-Infused Berry Crumb Cake

Sure, you could have eggs and toast for breakfast — but if you wanna be a cool kid, go for this berry crumb cake instead (pssst… it has weed in it).

This buttery cakes is filled with berries in every bite with cinnamon sugar topping that will leave you begging for seconds. And feel free to play around with the flavors! You wanna use cherries? Ingredients: (makes roughly 8 slices)

For the Crumble:

  • 1/4 cup granulated sugar

  • 1/3 cup light brown sugar, lightly packed

  • 1 teaspoon ground cinnamon

  • 1/8 teaspoon ground nutmeg

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 1/3 cups all-purpose flour

For the Cake:

  • 6 tablespoons unsalted butter/cannabutter, softened (ratio is up to you and your tolerance)

  • 3/4 cup sugar

  • 2 eggs

  • 1 teaspoon pure vanilla extract

  • 1/2 teaspoon grated lemon zest

  • 2/3 full fat Greek yogurt or sour cream

  • 1 1/4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon kosher salt

  • 1 1/2 cup berries of choice (fresh or frozen)

Instructions:

For the Crumble:

  1. Combine the flour, sugar, brown sugar, cinnamon, and nutmeg in a bowl. Stir in the melted butter. Mix well and set aside.

For the Cake:

  1. Preheat the oven to 350°F. Line a 9 inch cake round with parchment paper or butter it thoroughly.

  2. Cream the butter and sugar with a handheld or standing mixer until light. Add the eggs 1 at a time, then add the vanilla, lemon zest, and Greek yogurt. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, add the flour mixture to the batter until just combined.

  3. Fold in berries and stir with a spatula to be sure the batter is completely mixed. If you’re using frozen, dust the berries with a bit of flour to soak up any moisture they might give off.

  4. Spoon the batter into the prepared pan and spread it out with a rubber spatula.

  5. Using your hands, crumble the topping evenly over the batter. Bake for 40+ minutes, until a butter knife or toothpick comes out clean. Cool completely and serve sprinkled with confectioners' sugar, if desired.
