Cannabis-Infused Pear Spice Upside Down Cake

There is nothing that says the holidays quite like gingerbread — and this pear spice upside-down cake will scratch that craving in an unexpected way.

I can say this for a fact as this recipe is one of my personal holiday traditions that I make each year. With a caramelized pear topping and crunchy nuts, this fluffy gingerbread inspired cake hits all of the Christmas checkmarks. Warm and comforting? Check. Spicy yet sweet? Check. Packed full of weed? Check.

Ingredients:

For the Topping:

  • 2 pears, sliced and peeled

  • 1/2 cup melted butter

  • 1/2 cup of nuts (optional)

  • 1/4 cup brown sugar

For the Cake: (makes about 8 slices)

  • 1 1/2 cup flour

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda,

  • 1/2 tsp salt

  • 3/4 tsp cinnamon

  • 3/4 tsp ginger

  • 1/8 tsp allspice

  • 1/2 cup softened cannabutter/butter (ratio of cannabutter and regular butter up to you and your desired dosage)

  • 1/3 cup sugar

  • 1 egg

  • 1/3 cup molasses

  • 1/2 cup warm water

Instructions:

  1. Preheat the oven to 350°F.

  2. Take a 9” cake round and prepare your topping. Spread the melted butter, brown sugar, and nuts in the base of the pans. Lastly, arrange the pears over top into a presentable pattern. Set aside.

  3. In a medium-sized bowl, mix together flour, baking powder, baking soda, salt, cinnamon, ginger, and allspice until combined. Set aside.

  4. Take a hand mixer (if you have it) and whip the butter and sugar together until fluffy. Beat in the egg, followed by the molasses.

  5. Mix half of the flour mixture into your butter and sugar mixture with 1/4 cup of warm water. Beat until combined and follow with the rest of the flour and water. Beat again until you have a thick and smooth cake batter.

  6. Carefully spread the cake batter over the pear topping.

  7. Place the prepared cake into the preheated oven for 35-45 minutes, or until a toothpick comes out clean.

  8. When the cake is ready, allow it to cool for 10 minutes before turning it over onto a plate. Serve warm and enjoy!
